Grape, Walnut and Feta Salad

Last weekend I had the most amazing fruit salad and thought it would be perfect for the blog. It was sweet, tangy and a little salty. Perfecto! One of the best things about this recipe is it’s versatility. It’s awesome on its own for breakfast or a snack and it’s an amazing addition to your spring mix or spinach salad.  I didn’t have a recipe for this dish, but I think my version is pretty tasty.

Grape, Walnut and Feta Salad

Ingredients:

2 lbs. grapes – mixture of green and purple

1 cup of feta cheese crumbles

1 cup walnut pieces

For the dressing:

2 tbsp olive oil

4 tbsp white wine vinegar

1 tsp stevia

Salt and pepper, to taste

Wash the grapes thoroughly and remove their stems. In a large bowl, combine grapes, walnuts and feta cheese.  In a separate small bowl, mix the olive oil, feta cheese, vinegar, stevia, salt and pepper. Whisk the dressing mixture thoroughly Pour over the grape mixture and toss. Cover and refrigerate.

For the best flavor, I would suggest preparing it a couple of hours prior to serving and make sure it’s chilled well.
